Gluten-free Biscuit Recipe

By Luci Fardo

There is something comforting for me about a biscuit. It isn't something that I crave on a regular basis but sometimes they are welcomed. Having Celiac Disease or being gluten intolerant it becomes difficult to find food that won't make you sick, but have the taste of the real thing. Before Celiac disease I used to make a knock-off biscuit that was like Hardees. I thought about this week and decided to experiment with making my own gluten free knock off version. They turned out very much like the original so I thought I would share the recipe with you.

Biscuits

2 cups Gluten Free Bisquick mix.

2/3 cup of buttermilk

1/2 cup butter

3 beaten eggs

1 tbsp. vegetable oil

Preheat oven to 400

In a mixing bowl add the gluten free flour, pour in the buttermilk, stir slightly, then add the beaten eggs, and butter. Stir up the mixture until blended well. On a small cookie sheet coat well with vegetable oil. With your hands shape the dough into biscuits. Bake in the oven 13-16 minutes or until golden brown.
