Autumn Salad

Luci's Autumn Salad


I love salad in the summer so very much. I always feel kind of sad at the idea of summer ending. The produce is no longer tasting like summer. I decided to hunt for a fall salad. One with fresh vegetables of the fall season. I created this one yesterday and wanted to share it with you!




Ingredients


One baked sweet potato cooled and diced into squares.

One fresh pear diced into squares.

Two cups of baby Spinach

One red apple cubed

1/4 c. Cranberries or raisins

1 cup roasted pecan halves

1/4 C. bacon bits

1/3 C. Feta cheese (Optional)

Place the greens in a bowl and add all other ingredients.

Dressing:

3 tbsp dijan mustard

1/4 C. maple syrup

1/3 C. olive oil

1 tsp. of both salt and pepper

Mix dressing up and pour on salad.
