Spicy Poached Shrimp

By luci phillips

Here is another winner! I found a fantastic item to make your #AIP or Paleo diet spectacular. I love this recipe and I hope that you will too It is poached and cooked slow to prevent toughness. The olive oil gives it more flavor as well.

Ingredients

1 lb large shrimp peeled and deveined.

1/2 sea salt

1/3 c olive oil

6 cloves of garlic

3 dried chili

1/2 tsp red pepper

2 ounces cooking sherry

1 tsp lemon

3 tbsp parsley

1. Arrange shrimp on a baking sheet. Pat dry with a paper towel. Sprinkle with salt.

2. Heat skillet on medium heat. Add olive oil, garlic, chilis, and pepper flakes. Stir constantly until garlic is gold not browned. This will be about one minute. Add shrimp and cook until pink. This is usually thirty minutes. Add sherry and lemon. Stir until combined. Remove from heat and add parsley. Transfer to serving bowl.
