Rosemary Pork Chops

By Luci Phillips

Here is a new recipe for dinner. A wonderful meal of herbed pork chops. This diet works for #Paleo and #AIP. I love this recipe. For those of us with #autoimmiune diseases this meal is so tasty and healthy. I know that when I eat healthy I feel better. We are truly connected with our food! Enjoy the recipe!

Ingredients

Three pounds of pork chops or 3/4 lb each

two tbsp of lard or avocado oil

two cloves of crushed garlic

fresh rosemary several sprigs

Coat the pork chops with sea salt and pepper

Bring the pork chops to room temperature for 25 minutes

Preheat the oven to 425

Melt lard in the iron skillet. After it is simmering put the chops in. Sear the pork chops for three minutes on one side, two on the next, than a final time for two minutes. Move the skillet to the oven and keep flipping about every two minutes for ten minutes. Transfer the pork chops to a plate. In the skillet add crushed garlic and thyme and saute for about a minute. Then move the chops back to the pan. Allow them to simmer for a minute. Finally allow them to rest a few minutes and serve.
